About the grape — Chardonnay is the world's most famous white grape, remarkably versatile, ranging from crisp and citrusy when unoaked to rich and buttery with notes of apple, pear and, when oak-aged, vanilla and toast. Oregon, up in the cool, rainy Pacific Northwest, has made its name with elegant, cool-climate wines — its silky Pinot Noir above all. Bring on the richer plates — roast chicken, creamy sauces, salmon. Best straight from the fridge, nicely chilled.
