Matamis Apostolos matamis brut 2019


The Matamis Matamis Brut is a sparkling white wine, primarily made from the Assyrtiko variety. The vineyards are located in Pyrgos, Santorini, at an altitude of 366 meters, contributing to the wine’s unique terroir. It has an alcohol content of 12%, total acidity of 8.5g/L, residual sugars in the brut range, a pH of 3.1, and a pressure of 6 bar. This wine is produced using the traditional method with a second fermentation in the bottle and a two-year maturation with the lees. It features a yellow-gold color and a rich nose with mineral notes, green apple, and citrus, complemented by light notes of noble barrel. The palate is generous, dominated by fresh acidity and a long aftertaste, with rich and explosive foaming. It pairs well with oily fish, slightly smoky shellfish, exotic fruits like pineapple and mango, yellow fruits, and soft cheeses. The aging potential is lengthy, and it is produced in a limited quantity of bottles
