Dom. chapitre Touraine sauvignon blanc 2022

The 2022 Domaine du Chapitre Sauvignon Blanc, produced by winemakers Maryline and François Desloges in the Loire Valley's Touraine region, is a remarkable white wine. The vineyard, founded in the early 19th century, is situated in Saint Romain sur Cher and covers 28 hectares. The vineyards lie on the banks of the Cher river, with a terroir primarily consisting of sand with flint, though clay and limestone are found further north. This particular wine is made from Sauvignon Blanc grapes, undergoing a winemaking process that includes a 6-hour cold soak, native yeast fermentation in stainless steel, and aging for 8 months on the lees in tanks. The Desloges family, including the 6th generation winemaker Valentin, focuses on reflecting the unique terroir of Touraine and Touraine Chenonceaux in their wines. Tasting notes for the Domaine du Chapitre Sauvignon Blanc describe it as a natural white wine with citrusy stone fruit flavors and a wild floral aroma. Notes of herbs, bright acidity, and a smooth mineral finish are also prominent. The wine's flavor profile includes peach, citrus, grapefruit, and strawberry. It pairs well with a variety of dishes such as prawn fried rice, bean sprouts spring rolls, and chicken parmesan. Additionally, the wine exhibits a citrus melange on the nose with a smoky, savory underpinning. On the palate, it is very fresh and zippy, featuring flavors of white peach, gooseberry, and lemon peel. The chalk terroir influences the finish, imparting a jolt of river-rock minerality, making it flinty, quartz-like, and humming with energy. This Sauvignon Blanc is particularly distinctive and delicious. Recommended food pairings include goat cheeses, simple grilled white-meat fish, bruschetta, and gazpacho. The Domaine du Chapitre's commitment to sustainable farming is also noteworthy. They have been practicing sustainable farming for many years and started the organic certification process in 2022. Their approach includes using soft tillage, increasing biodiversity with beehives, and managing yields between 35 and 45hl/ha. The grapes are hand-picked and sorted at the winery, and the wines are lightly filtered with minimal sulfur addition before bottling.
