What is Katsano?
Katsano- Thιs local, scarce variety of Santorini, is rarely vinified alone, due to the extremely small cultivation areas. It is most commonly found scattered among the branches of other varieties like Assyrtiko and Athiri. The minimum varietal efforts made, give wines with distinctive minerality due to volcanic subsoil of the island, along with some white flowers, fresh fruit and citrus. It has moderate acidity and it is oily and rich in alcohol.
