Say hello to this dry white wine from Petit Balthazar Minervois, made in France from the 2023 vintage. France is the spiritual home of wine, the place that gave us most of the world's classic styles and the whole idea that where a wine grows shapes how it tastes. The grapes are grown organically, too. It's lovely with fish, shellfish, salads and lighter plates. Best straight from the fridge, nicely chilled.
