This is Sokos's take on Assyrtiko — a dry white wine out of Greece from the 2025 vintage. A quick word on the grape: Assyrtiko is Greece's noblest white grape, native to Santorini, producing bone-dry, mineral-driven wines with searing acidity and citrus, saline and stone-fruit character. Greece has been making wine for thousands of years, and its sun-drenched hills and breezy islands grow native grapes you simply won't find anywhere else. Pour it with shellfish, fish tacos, salads or anything from the sea. Best straight from the fridge, nicely chilled.
