This is Nyaj's take on Verdejo — a dry white wine out of Spain, and it's a non-vintage bottling. A quick word on the grape: Verdejo is the signature white of Spain's Rueda, giving crisp, herbal wines with citrus, green apple and a subtle bitter-almond note. Spain has more vines than any country on earth, and a style for every mood — from cool Atlantic whites to the warm, oak-aged reds it's famous for.
