A dry white wine from Greece, made with Assyrtiko from the 2024 vintage. Assyrtiko is Greece's noblest white grape, native to Santorini, producing bone-dry, mineral-driven wines with searing acidity and citrus, saline and stone-fruit character. It hails from Santorini, the windswept volcanic island where vines are coiled low into basket shapes to survive the gales — the dramatic soils give the wines a thrilling, salty minerality. A natural with seafood and fresh, zingy dishes — fish, salads, soft cheeses. Best straight from the fridge, nicely chilled.
