Foundi Imathia dry white 2025

From Foundi in Greece, this dry white wine is built around Xinomavro from the 2025 vintage. Here's the fun twist: Xinomavro is famous as northern Greece's great red grape, but its juice actually runs pale — vinified gently off the dark skins, it becomes a fresh, crisp white like this one. It comes from Imathia in Greek Macedonia, in the foothills below Mount Vermio. It's made for seafood — oysters, grilled fish, a fresh salad or a tangy goat cheese. Serve it well chilled.
