Anhydrous Santorini pdo (aaa) 2024

A dry white wine from Greece, made with Assyrtiko, Athiri and Aidani from the 2024 vintage. Assyrtiko is Greece's noblest white grape, native to Santorini, producing bone-dry, mineral-driven wines with searing acidity and citrus, saline and stone-fruit character. Athiri comes along for the ride as well — an ancient Greek white grape giving soft, fresh wines with citrus and light floral notes. It hails from Santorini, the windswept volcanic island where vines are coiled low into basket shapes to survive the gales — the dramatic soils give the wines a thrilling, salty minerality. Pour it with shellfish, fish tacos, salads or anything from the sea. Best straight from the fridge, nicely chilled.
